Instructions
- Pour the strawberry gelatin powder into a large mixing bowl.
- Add the boiling water and stir continuously for about 2 minutes until the gelatin dissolves completely.
- Pour in the cold water and stir thoroughly to combine.
- Allow the gelatin mixture to cool to room temperature for 10-15 minutes.
- Refrigerate the gelatin mixture for 30-45 minutes until it reaches a thick, syrupy consistency.
- Remove the partially set gelatin from the refrigerator.
- Add the small-curd cottage cheese and gently fold until evenly incorporated.
- Drain the pineapple chunks thoroughly and fold them gently into the mixture.
- Fold in the thawed whipped topping until the mixture is light and evenly combined.
- Transfer the mixture into a 9×13-inch dish or individual serving cups.
- Cover and refrigerate for at least 3-4 hours until completely set.
- Serve chilled directly from the refrigerator.
Notes
Use sugar-free strawberry gelatin for a lower-sugar version. Make sure the pineapple is drained thoroughly, and avoid fresh pineapple unless it has been cooked because fresh pineapple can prevent gelatin from setting.
