Instructions

  1. Preheat the oven to 400°F.
  2. Line a baking sheet with parchment paper.

  9. Pour in the dill pickle juice and stir gently with a fork.
  10. Add the diced dill pickles and shredded cheddar cheese.
  11. Fold in the chopped fresh dill until the dough is just combined.
  12. Turn the dough onto a lightly floured surface and gently press it into a cohesive mass without kneading.
  13. Pat the dough into a rectangle about 3/4 inch thick.
  14. Cut the dough into biscuits using a 2-inch biscuit cutter, pressing straight down without twisting.
  15. Place the biscuits on the prepared baking sheet about 1 inch apart.
  16. Bake for 16-18 minutes until the tops are golden brown.
  17. Transfer the biscuits to a cooling rack and cool for 3-5 minutes before serving.

Notes

Keep the butter cold for flaky layers, and pat the diced pickles completely dry before adding them to the dough. Mix only until combined to keep the biscuits tender.
