Instructions
- Cook short-grain rice in a rice cooker until fluffy and tender, season with sushi vinegar, sugar, and salt, then cool to room temperature.
- Cut nori sheets into circular shapes using a large glass as a guide, dip into light tempura batter, and fry in hot oil until rigid and crispy. Drain on paper towels.
- Scoop a small portion of seasoned rice into each shell, layer the spicy tuna mixture, add avocado and cucumber, and garnish with sesame seeds and soy sauce.
Notes
Ensure the rice reaches room temperature before assembly to prevent the nori from becoming soggy too quickly. Maintain oil temperature at 350 degrees F to ensure the nori shells turn crispy without burning. Assemble the shells immediately before serving to guarantee the signature crunch.
