Instructions

- Place your cherry tomatoes and whole garlic cloves in a large glass baking dish before drizzling them generously with high-quality olive oil, then create space for your block of cheese in the center.
- Sprinkle dried oregano and red pepper flakes over the tray before sliding it into the oven for 35 minutes.
- Boil your favorite pasta in salted water until it reaches the al dente stage, saving a small cup of starchy water.
- Remove the tray from the oven, smash the softened tomatoes and feta with a fork to form a uniform, creamy sauce, then toss the cooked pasta into the dish with small splashes of the saved water.
Notes
Use a high-quality block of feta in brine because pre-crumbled versions contain anti-caking agents that prevent a smooth melt. Reserve some pasta water before draining to help emulsify the sauce. Add fresh basil leaves only after pulling the dish from the oven to preserve their color and aroma.
