Instructions

  1. Bring a large pot of salted water to a rolling boil over high heat.
  2. Add pasta and cook according to package directions until al dente, usually 8 to 12 minutes depending on pasta type.
  3. Reserve 1 cup of pasta water before draining the pasta completely.
  4. Set the cooked pasta aside in a colander but do not rinse it.
  5. Preheat your oven to 400 degrees Fahrenheit while the pasta cooks.
  6. Halve all cherry tomatoes and place them cut-side up in a large baking dish or rimmed sheet pan.
  7. Drizzle the tomatoes with 4 tablespoons olive oil.

  10. Roast the tomatoes for 20 to 25 minutes until they burst and release their juices.
  11. Remove the roasted tomatoes from the oven.
  12. Immediately add the block of feta cheese to the center of the pan.
  13. Return the pan to the oven for 3 to 4 minutes, just until the feta begins to soften.
  14. Transfer the cooked pasta to the baking dish with the tomatoes and feta.
  15. Add the remaining 2 tablespoons olive oil.
  16. Gently toss everything together, breaking the feta into smaller pieces as you combine.
  17. Add reserved pasta water 1/4 cup at a time until the sauce becomes silky and coats the pasta.
