  • 14 oz silken tofu, drained
  • 3 tablespoons white miso paste or chickpea miso
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 2 to 4 tablespoons water
  • 1 teaspoon maple syrup
  • 1 garlic clove, minced
  • 1/2 teaspoon fresh ginger, minced, optional
  • Pinch of sea salt
  • Pinch of white pepper

Instructions

  1. Open the package of silken tofu and carefully drain the excess liquid without pressing the tofu.
  2. Cut the drained silken tofu into chunks and place them in a food processor or blender.
  3. Add 3 tablespoons white miso paste to the processor with the silken tofu.
  4. Pour 2 tablespoons rice vinegar over the silken tofu and miso base.
  5. Add 1 tablespoon toasted sesame oil.
  6. Pulse the mixture 5 to 6 times to break down the silken tofu into smaller pieces.
  7. Blend on medium speed for 30 seconds until the dressing begins to form a smooth paste.
  8. Scrape down the sides of the processor bowl with a spatula.
  9. Blend again for another 30 seconds.
  10. Add minced garlic and minced fresh ginger.
  11. Pour in 1 teaspoon maple syrup to balance the salty miso paste.
  12. Blend for 30 seconds until the garlic and ginger are fully incorporated.
  13. Add 2 tablespoons water and pulse gently.
  14. Blend for 15 seconds and check the consistency.
  15. Add up to 2 additional tablespoons water, 1 tablespoon at a time, until the dressing is pourable but still thick enough to coat greens.
  16. Taste and adjust with sea salt and white pepper as needed.
  17. Blend on medium-high speed for 30 seconds until silky smooth.
  18. Transfer to a glass jar or container.
  19. Refrigerate immediately until ready to use.

Notes

Use only silken or soft tofu for the smoothest texture, never firm tofu. Add water gradually so the dressing stays creamy instead of runny. Prepare at least 2 hours ahead when possible so the miso, garlic, ginger, and sesame flavors can deepen.
