Instructions
- Combine unflavored gelatin powder with 1/4 cup cold water in a small mixing bowl and let it sit for 5 minutes to bloom properly.
- Measure 2 cups unsweetened cranberry juice and 1 cup filtered water into a medium saucepan.
- Heat the juice and water combination over medium heat until it reaches a gentle simmer, about 3 to 4 minutes.
- Remove the pan from heat immediately and add the bloomed gelatin mixture.
- Stir constantly for 1 full minute until the gelatin dissolves completely.
- Add honey or stevia if your juice tastes overly tart, stirring until fully dissolved.
- Pour the pink gelatin mixture into 4 individual serving cups or 1 larger glass bowl, dividing evenly.
- Allow the mixture to cool to room temperature for about 15 minutes, stirring occasionally to release heat.
- Transfer the servings to the refrigerator and chill for 4 to 6 hours until firm but still slightly jiggly.
- Top each serving with fresh strawberries, raspberries, or a small dollop of unsweetened whipped cream when ready to serve.
Notes
