Instructions
- Inspect all equipment carefully before starting.
- Sanitize mixing bowls, utensils, saucepan, thermometer, and ice cream maker parts.
- Separate the organic egg yolks from the whites.
- Combine organic heavy cream and organic whole milk in a heavy-bottomed saucepan.
- Heat the dairy mixture to 180°F over medium heat while monitoring closely.
- Whisk the organic egg yolks with organic sugar in a separate bowl until pale and fluffy.
- Slowly add some hot cream mixture to the egg yolks while whisking continuously.
- Pour the tempered egg mixture back into the saucepan.
- Cook while stirring constantly until the mixture reaches 160°F.
- Strain the ice cream base through fine cheesecloth.
- Stir in organic vanilla extract and sea salt.
- Cool the base to room temperature.
- Refrigerate for at least 4 hours until completely chilled.
- Pour the chilled base into the ice cream maker.
- Churn for 20-25 minutes until soft-serve consistency forms.
- Transfer to glass or food-grade plastic freezer-safe containers.
- Freeze for at least 2 hours before serving.
