Ingredients
- 3 large Ripe Mangoes (Alphonso or Ataulfo recommended)
- 1.5 cups Full-Fat Greek Yogurt
- 3 tbsp Honey or Maple Syrup
- 250g Dark Chocolate (70 percent cocoa)
- 2 tbsp Coconut Oil
Instructions
- Blend peeled and chopped mango chunks in a food processor until completely smooth.
- Combine the mango puree with the Greek yogurt and honey in a large glass mixing bowl.
- Whisk the mixture thoroughly to ensure no lumps of yogurt remain.
- Pour the mixture into popsicle molds, leaving a small space at the top for expansion during freezing.
- Insert popsicle sticks and place the molds in the freezer for at least four hours until firm.
- Melt dark chocolate and coconut oil together in a heat-safe bowl using a double boiler method.
- Stir the chocolate mixture constantly until smooth and fully melted.
- Unmold frozen mango bars by running warm water over the exterior of the molds for five seconds.
- Dip each bar quickly into the melted chocolate coating, turning once to ensure full coverage.
- Place finished bars onto a parchment-lined tray and set in the freezer for another 10 minutes.
Notes
Ensure mangoes are fully ripe for best texture. Melt chocolate gently over a double boiler to avoid burning or seizing. Use a tall, narrow glass for clean dipping. Allow mango centers to freeze rock-solid before unmolding. Store bars in an airtight container in the freezer for up to 2 weeks.
