- 2 tablespoons (14g) powdered gelatine
- ¼ cup (60ml) cold water, for blooming
- 2 cups (480ml) fresh fruit juice or clear broth
- 3–4 tablespoons honey or caster sugar
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract or aromatic liqueur alternative
- Pinch of sea salt
- Fresh herbs or edible flowers, optional garnish
Instructions
- Pour ¼ cup cold water into a small heat-safe bowl.
- Sprinkle the powdered gelatine evenly across the water surface without stirring.
- Let the mixture sit undisturbed for 5 minutes until fully bloomed.
- Pour the fresh fruit juice or broth into a heavy-bottomed saucepan.
- Warm the liquid over medium heat to about 160°F, stirring occasionally without boiling.
- Remove the saucepan from heat when tiny bubbles form around the edges.
- Add the bloomed gelatine to the warm liquid.
- Stir constantly for 2 minutes until completely dissolved and smooth.
- Strain the mixture through a fine-mesh sieve to remove any undissolved particles.
- Stir in the honey or caster sugar until dissolved.
- Add the fresh lemon juice, vanilla extract, and sea salt.
- Stir for 30 seconds until fully combined.
- Allow the mixture to cool to room temperature for 15 minutes, stirring occasionally.
- Pour the cooled mixture into serving glasses or a single mold.
- Cover loosely with plastic wrap.
- Refrigerate for at least 4 hours, preferably overnight, until set.
- Gently shake the container to check that the gelatine wobbles but holds its shape.
- Garnish with fresh herbs or edible flowers before serving if desired.
Notes
Bloom gelatine in cold liquid before heating to prevent clumps. Keep the juice between 160-180°F and never boil after adding gelatine. Avoid fresh pineapple, kiwi, or papaya because their enzymes prevent proper setting. Store covered in the refrigerator for 3-4 days.
