  • 1/2 cup fresh pineapple, diced small
  • 12 teaspoons raw honey or stevia, optional
  • 1 tablespoon lemon juice
  • Pinch of sea salt

Instructions

  1. Bring 1 cup of water to a rolling boil in a small saucepan.
  2. Pour the boiling water into a heat-safe mixing bowl.
  3. Add both packets of sugar-free gelatin powder immediately.
  4. Stir continuously for 2-3 minutes until the gelatin dissolves completely.
  5. Add the lemon juice and pinch of sea salt.
  6. Let the gelatin mixture cool to room temperature for 5-7 minutes.
  7. Stir in the coconut water or unsweetened fruit juice slowly.
  8. Add the raw honey or stevia if using.
  9. Stir until fully incorporated.
  10. Taste and adjust sweetness or citrus brightness if needed.
  11. Pour half of the gelatin mixture into serving glasses or a loaf pan.
  12. Refrigerate for 45 minutes to 1 hour until the first layer becomes gel-like but not fully set.
  13. Distribute half of the fresh berries, kiwi, and pineapple evenly over the partially set layer.
  14. Pour the remaining gelatin mixture over the fruit.
  15. Add the remaining fresh berries and fruit to the top layer.
  16. Refrigerate uncovered for at least 4 hours, or overnight for the firmest texture.
  17. If using fresh kiwi, add it during the final hour of setting.
  18. Check that the jello wobbles slightly but holds its shape when spooned.
  19. Serve chilled directly from the pan or glasses.

Notes

Use boiling water so the gelatin dissolves completely. Add enzyme-rich fruits like fresh kiwi or pineapple during the final hour of setting to help prevent the gelatin from breaking down. Store covered in the refrigerator for up to 5-7 days.
