Instructions
- Combine 3 cups shredded coconut with 1 can sweetened condensed milk in a large mixing bowl.

- Continue mixing until the filling reaches a consistent, moldable texture with no dry coconut pieces visible.
- Transfer the coconut mixture to a parchment-lined 8-by-8-inch baking pan.
- Press firmly to create an even layer.
- Use the bottom of a measuring cup or your hands to pack the mixture tightly into the pan.
- Place the baking pan in the refrigerator for 30 minutes to firm up the coconut base.
- Check that the filling has solidified enough to cut into bars without falling apart.
- Remove the pan from the refrigerator and let it sit at room temperature for 5 minutes.
- Cut the coconut layer into 12 equal bars using a sharp knife dipped in hot water between cuts.
- Place the cut bars on a parchment-lined baking sheet, spacing them slightly apart.
- Melt 1 1/2 cups dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each interval until smooth.
- Allow the melted chocolate to cool for 3 minutes before dipping.
- Using 2 forks or a dipping fork, coat each coconut bar completely with melted chocolate.
- Return each chocolate-coated bar to the parchment-lined baking sheet immediately after dipping.
- Refrigerate the finished bars for 30 minutes until the chocolate coating sets completely.
- Store in an airtight container in the refrigerator or at room temperature if your kitchen is cool.
Notes
Press the coconut filling firmly into the pan so the bars hold together cleanly when sliced. Use dark chocolate between 60 and 70 percent cocoa for the best bitter-sweet contrast, and chill the bars fully before cutting and coating.
