Ingredients
Scale
- 2 pounds ground beef, 80/20 blend preferred
- 1 pound spaghetti noodles
- 24 ounces canned tomato sauce
- 1 large onion, diced
- 6 garlic cloves, minced
- 3 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon sugar
- 1 cup water
- ½ cup Parmesan cheese, grated, optional for serving
Instructions
- Dice the onion into small, uniform pieces.
- Mince the garlic cloves finely.
- Fill a large pot with salted water and place it over high heat to boil.
- Gather all remaining ingredients and seasonings near your cooking station.
- Heat the olive oil in a large skillet over medium-high heat until shimmering.
- Add the ground beef to the hot oil.
- Break the beef apart with a wooden spoon.
- Cook for 8 to 10 minutes until thoroughly browned and no longer pink.
- Drain excess fat if more than 1 tablespoon remains in the skillet.
- Keep the flavorful browned bits in the pan.
- Add the diced onion to the browned meat.
- Sauté for 3 to 4 minutes until softened and fragrant.
- Stir in the minced garlic.
- Cook for exactly 1 minute until the raw garlic smell fades.
- Do not let the garlic burn.
- Pour the tomato sauce into the meat mixture.
- Stir thoroughly to combine.
- Add the sugar, dried oregano, dried basil, salt, and black pepper.
- Stir constantly to distribute the seasonings evenly.
- Pour in 1 cup water to adjust the sauce consistency.
- Bring the sauce to a gentle simmer over medium heat.
- Reduce the heat to maintain a steady simmer without boiling.
- Simmer for 15 to 20 minutes, stirring occasionally.
- Add the spaghetti to the boiling salted water once it reaches a rolling boil.
- Stir frequently during the first minute to prevent sticking.
- Cook according to package directions, usually 9 to 12 minutes.
- Taste at 9 minutes to check for al dente texture.
- Reserve 1 cup of pasta water before draining.
- Drain the cooked pasta in a colander.
- Combine the drained pasta with the meat sauce in the skillet or a large bowl.
- Toss thoroughly to coat every strand.
- Add reserved pasta water 1 tablespoon at a time if the spaghetti appears dry.
- Taste and adjust salt or seasonings as needed.
- Serve immediately while hot.
- Top with freshly grated Parmesan cheese if desired.
Notes
Brown the ground beef well for deep savory flavor. Use fresh garlic instead of garlic powder for the best taste. Reserve pasta water before draining so the sauce becomes silky and coats every strand.
