A cottage cheese lava cake recipe delivers a rich molten chocolate center with a surprisingly light, protein-rich crumb made from cottage cheese, dark chocolate, butter, eggs, cocoa powder, and vanilla for an elegant French-inspired dessert that feels decadent yet wholesome.

  • Total Time: 29 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 cup full-fat cottage cheese, blended until smooth
  • 6 ounces dark chocolate, 70% cacao, finely chopped
  • 4 tablespoons unsalted butter
  • 2 large eggs, room temperature
  • 3 tablespoons granulated sugar
  • 3 tablespoons all-purpose flour
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon unsweetened cocoa powder
  • ¼ teaspoon sea salt
  • Baking spray or butter, for ramekins

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Position the oven rack in the center of the oven.
  3. Generously coat 4 ramekins with baking spray or butter.
  4. Make sure the bottoms and sides of each ramekin are fully covered.
  5. Place the prepared ramekins on a baking sheet.
  6. Blend the cottage cheese in a food processor for 2 to 3 minutes until completely smooth.
  7. Chop the dark chocolate into small, uniform pieces.
  8. Combine the chopped chocolate and butter in a microwave-safe bowl.
  9. Heat in 30-second intervals, stirring between each interval, until melted and smooth.
  10. Let the chocolate mixture cool for 2 minutes.
  11. Add the room-temperature eggs one at a time to the chocolate mixture.
  12. Whisk thoroughly after each egg.
  13. Stir in the blended cottage cheese until the mixture is smooth and uniform in color.
  14. In a separate small bowl, whisk together the sugar, flour, vanilla extract, cocoa powder, and sea salt.
  15. Gently fold the dry ingredients into the chocolate-cottage cheese mixture.
  16. Stir only until no streaks of flour remain visible.
  17. Divide the batter evenly among the 4 prepared ramekins.
  18. Fill each ramekin about three-quarters full.
  19. Place the baking sheet with the ramekins into the preheated oven.
  20. Bake for 13 to 14 minutes until the edges are set and the center still jiggles slightly.
  21. Remove the ramekins from the oven immediately.
  22. Let the cakes rest in the ramekins for exactly 1 minute.
  23. Place a serving plate over the top of each ramekin.
  24. Carefully flip to invert the cake onto the plate.
  25. Gently lift away the ramekin.
  26. Serve immediately while the molten chocolate center is warm and flowing.

Notes

Blend the cottage cheese until completely smooth to avoid lumps in the batter. Check the cakes at 13 minutes because overbaking will set the molten center. Let the cakes rest for only 1 minute before inverting so the edges hold while the center stays lava-like.
