- 1 package phyllo dough sheets, about 14 sheets
- 2 cups green cabbage, shredded
- 1 cup carrots, finely diced
- 1/2 cup green onions, chopped
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger root, minced
- 2 tablespoons low-sodium soy sauce
- 1 teaspoon sesame oil
- Cooking spray, as needed
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
- Combine the shredded cabbage, diced carrots, chopped green onions, minced garlic, and minced ginger in a large mixing bowl.
- Add the low-sodium soy sauce, sesame oil, black pepper, and salt.
- Mix thoroughly until the seasonings are evenly distributed throughout the filling.
- Let the filling rest for 3 minutes to allow the flavors to meld.
- Lay one phyllo dough sheet on a clean, dry work surface with the longer edge facing you.
- Place 2 tablespoons of filling along the bottom edge of the phyllo sheet, leaving 1/2 inch space on each side.
- Fold the left and right edges inward over the filling.
- Roll the phyllo sheet tightly toward the top to form a compact cylinder.
- Repeat with the remaining phyllo sheets and filling.
- Cut each completed roll into 2 equal pieces using a sharp knife.
- Preheat the air fryer to 375°F for 5 minutes.
- Arrange the lumpia pieces seam-side down in the air fryer basket in a single layer.
- Lightly spray both sides of each piece with cooking spray.
- Air fry at 375°F for 12 minutes, shaking the basket halfway through cooking.
- Remove the lumpia chips when golden brown and crispy.
- Transfer to a wire rack and cool for 2 minutes before serving.
Notes
Squeeze excess moisture from the shredded cabbage before preparing the filling to help the wrappers stay crisp. Keep the lumpia pieces in a single layer while air frying, and cook in batches if needed.
