Instructions
- Measure 1 cup fresh water into a heat-safe bowl or measuring cup.
- Bring the water to a rolling boil on the stovetop or with an electric kettle.
- Sprinkle 2 tablespoons unflavored gelatin powder evenly over the surface of the boiling water.
- Let the gelatin bloom for 30 seconds without stirring.
- Whisk vigorously for 2 minutes until all gelatin granules dissolve completely.
- Transfer the dissolved gelatin to a separate bowl.
- Let the gelatin cool for 5 minutes at room temperature.
- Add liquid stevia or monk fruit extract to the cooled gelatin mixture.
- Stir thoroughly to distribute the sweetness evenly.
- Taste and adjust sweetness if needed.
- Place 1½ cups non-fat Greek yogurt into a large mixing bowl.
- Pour the cooled, sweetened gelatin mixture into the yogurt slowly while stirring continuously.
- Whisk for 2 to 3 minutes until completely smooth with no visible lumps.
- Divide the mixture evenly among 4 serving bowls or glasses.
- Cover each portion with plastic wrap.
- Refrigerate for at least 4 hours, preferably overnight, until fully set.
- Remove portions from the refrigerator 15 minutes before serving for the best texture.
- Top with fresh berries, unsweetened cocoa powder, or toasted nuts if desired.
- Stir gently before eating.
- Serve chilled.
Notes
Use unflavored gelatin, not flavored gelatin packets with added sugar. Let the dissolved gelatin cool before mixing it with Greek yogurt to avoid clumps. Refrigerate for at least 4 hours, but overnight chilling creates the smoothest custard-like texture.
