- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 3/4 cup all-purpose flour

- 1/4 tsp salt
- 1/4 tsp ground cinnamon
- 1 1/2 cups old-fashioned rolled oats
- 1/2 cup dark chocolate chips (optional)
- Flaky sea salt, for sprinkling (optional)
Instructions
- Cream together the butter and peanut butter until smooth, about 5 minutes.
- Add brown and white sugars, beat until light and fluffy.
- Mix in the egg and vanilla until well combined.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture.
- Fold in the oats and optional chocolate chips with a spatula.
- Chill dough for at least 30 minutes.
- Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
- Scoop dough into balls and place 2 inches apart. Gently flatten each ball.
- Bake for 10–12 minutes until edges are golden and centers are soft.
- Sprinkle with flaky salt immediately after baking, if using.
- Cool on baking sheet for 5 minutes, then transfer to wire rack.
Notes
Use natural creamy peanut butter for best flavor. Rolled oats provide the ideal chew—avoid quick or steel-cut oats. Chill dough to prevent spreading. For extra flair, try mix-ins like raisins, pecans, or mini marshmallows.
