- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- Pinch of clove or allspice (optional)
- 2 large eggs, room temperature
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil (or melted butter)
- 3/4 cup buttermilk
- 2 1/2 cups peeled, diced apples (Granny Smith, Honeycrisp, or Jonagold)
- 1 tbsp lemon juice (for apples)
- Optional: 1/2 cup chopped walnuts or pecans
- Optional: 1/4 cup raisins or dried cranberries
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan. Line with parchment if desired.
- Peel and dice apples into small cubes. Toss with lemon juice and set aside.
- In a large bowl, whisk together eggs, granulated sugar, brown sugar, oil, and buttermilk until well combined.
- In another bowl, sift together flour, baking powder, baking soda, cinnamon, nutmeg, clove/allspice (if using), and salt. Mix to combine.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix.
- Fold in the diced apples and any optional mix-ins (nuts, raisins).
- Pour batter into the prepared pan and spread evenly. Tap the pan gently on the counter to remove air bubbles.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Let cool in the pan for at least 20 minutes before glazing or serving.
- Optional glaze: Mix powdered sugar, milk, and vanilla or maple syrup and drizzle over cooled cake.
Notes
Best enjoyed the next day when flavors intensify. Store covered at room temp for 2–3 days, or refrigerate for up to a week. Freezes well too!
