Ingredients

  • 4 medium sweet potatoes
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning (or homemade mix)
  • 1/2 cup canned black beans (rinsed and drained)
  • 1/2 cup corn (frozen, canned, or grilled)
  • 1/2 cup diced tomatoes or salsa
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • Salt & pepper to taste
  • Optional toppings: avocado, cilantro, jalapeños, sour cream or Greek yogurt, salsa or pico, lime wedges

Instructions

  1. Cook the sweet potatoes using your preferred method: oven at 400°F for 45 minutes, microwave for 7–10 minutes, or air fryer at 400°F for 35 minutes. Poke holes first to avoid explosions.
  2. In a skillet over medium heat, cook the ground meat until browned. Drain excess grease.
  3. Add taco seasoning and a splash of water. Simmer for 5–6 minutes.
  4. Stir in black beans, corn, and diced tomatoes (or salsa) and cook for another 2–3 minutes.
  5. Slice each cooked sweet potato open and fluff the insides with a fork.
  6. Spoon taco filling into each sweet potato and top with shredded cheese.
  7. Finish with desired toppings like avocado, sour cream, jalapeños, or lime juice.

Notes

To save time, pre-cook the meat and microwave the potatoes. Store components separately for easy meal prep.
