Ingredients

  • ½ cup coconut oil (soft but not melted)
  • 1 cup dark brown sugar (packed tight)
  • 1 large egg
  • 1 ½ tsp vanilla extract
  • 1 ¾ cup all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • Optional: ¾ cup chocolate chips, sea salt flakes, chopped nuts

Instructions

  1. In a large bowl, beat coconut oil and dark brown sugar until creamy.
  2. Add the egg and vanilla extract; stir until smooth.
  3. In a separate bowl, whisk together flour, baking soda, and salt.
  4. Gradually stir dry ingredients into wet mix until just combined.
  5. Fold in chocolate chips or other optional ingredients.
  6. Scoop tablespoon-sized dough balls onto a baking sheet.
  7. Chill dough for 30–60 minutes (or 20 minutes in the freezer).
  8. Preheat oven to 350°F (175°C).
  9. Bake cookies for 9–11 minutes, until edges are set and centers still soft.
  10. Cool on baking sheet for a few minutes, then transfer to a wire rack.

Notes

For extra gooey cookies, use melted coconut oil. For puffier cookies, keep oil solid. Chill dough for best results. Don’t overbake—cookies firm up as they cool.
