Chewy, chocolatey, slightly nutty bars made with quinoa, coconut, and cacao—perfect for a healthy snack, pre-workout fuel, or a sweet treat without the sugar crash.

Ingredients

  • 1 cup cooked quinoa (cooled)
  • ½ cup unsweetened shredded coconut
  • ¼ cup raw cacao powder or cacao nibs
  • ¼ cup nut butter (almond or peanut)
  • ¼ cup maple syrup or 4 mashed medjool dates
  • 1 tbsp coconut oil
  • 1 tbsp chia seeds (optional)
  • Pinch of sea salt

Instructions

  1. In a large bowl, combine cooked quinoa, shredded coconut, cacao, and chia seeds.
  2. In a small saucepan, gently warm nut butter, coconut oil, and maple syrup until smooth.
  3. Pour the wet mixture over the dry ingredients and stir until fully combined.
  4. Line a small square pan with parchment paper and press the mixture in firmly.
  5. Refrigerate for at least 2 hours until set.
  6. Lift from the pan, slice into bars, and store in an airtight container in the fridge.

Notes

For a twist, add chopped nuts, dried fruit, or a drizzle of melted dark chocolate before chilling. Keeps for about a week in the fridge or longer if frozen.
