  • 1/2 cup natural peanut butter
  • 1/4 cup honey or maple syrup
  • 2 cups old-fashioned rolled oats
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon (optional)
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chocolate chips, chopped nuts, dried fruit, or seeds

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mash the ripe bananas in a large mixing bowl until smooth.
  3. Stir in the peanut butter and honey (or maple syrup) until well combined.
  4. Add the rolled oats, baking powder, cinnamon, and vanilla extract, stirring until evenly mixed.
  5. Fold in any optional add-ins like chocolate chips, nuts, or dried fruit.
  6. Line an 8×8 or 9×9 baking dish with parchment paper and spread the batter evenly.
  7. Bake for 20–25 minutes, until edges are golden and the center is set.
  8. Cool for 15–20 minutes, then lift out and slice into bars or squares.
