Ingredients

  • 2 cups rolled oats
  • 1/4 cup unsweetened cocoa powder
  • Pinch of salt
  • 3/4 cup creamy peanut butter
  • 1/2 cup honey or maple syrup
  • 1/2 cup dark chocolate chips

Instructions

  1. In a large bowl, combine rolled oats, cocoa powder, and salt. Stir until evenly mixed.
  2. In a small saucepan over low heat, melt together peanut butter and honey (or maple syrup) until smooth, stirring constantly.
  3. Pour the peanut butter mixture over the oat mixture and stir quickly to combine.
  4. Let the mixture cool slightly, then stir in chocolate chips.
  5. Press mixture firmly into an 8×8 inch parchment-lined pan.
  6. Chill in the refrigerator for at least 1 hour.
  7. Lift out and cut into bars with a sharp knife.

Notes

For extra flavor, toast the oats before mixing and sprinkle flaky sea salt on top. Store in the fridge for up to a week or freeze for up to 2 months.
