Crispy, cheesy, and keto-friendly, these broccoli cheese rounds are the ultimate low-carb snack or side dish—perfectly golden on the outside and melty in the center.

Ingredients

  • 1 ½ cups finely chopped broccoli (fresh or frozen, steamed and well-drained)
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • ¼ tsp garlic powder
  • Salt & pepper to taste
  • Optional: chili flakes, minced onion, cooked bacon bits, or a pinch of Italian seasoning

Instructions

  1. Finely chop steamed broccoli until it resembles rice. If using frozen, thaw and squeeze out all moisture.
  2. In a bowl, mix broccoli, cheddar, Parmesan, egg, garlic powder, salt, and pepper until it forms a sticky dough.
  3. Line a baking sheet with parchment paper and form 2.5-inch wide rounds using a heaping tablespoon of the mixture.
  4. Bake at 400°F (200°C) for 15–18 minutes until golden and bubbly. For crispier rounds, broil for 2 additional minutes.

Notes

Store in an airtight container for up to 4 days or freeze for up to 2 months. Reheat in oven or air fryer for best texture.
