  • 2 cups all-purpose flour
  • 1 ½ cups sugar (½ white, ½ brown)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp ground cloves (optional)
  • 8 oz cream cheese, room temp
  • ½ cup unsalted butter, room temp
  • 2 cups powdered sugar, sifted
  • 1 tsp vanilla extract
  • Optional: pinch of salt or 1–2 tbsp maple syrup

Instructions

  1. Preheat oven to 350°F. Line or grease a 9×13 pan.
  2. In a bowl, whisk oil, pumpkin, eggs, and vanilla until smooth.
  3. In another bowl, combine flour, sugars, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  4. Gently fold dry ingredients into wet until just combined. Spread batter evenly in pan.
  5. Bake 28–32 minutes, until a toothpick comes out clean. Cool completely.
  6. For frosting: beat cream cheese and butter until fluffy, 2–3 minutes.
  7. Gradually add powdered sugar, then mix in vanilla (plus optional salt or maple syrup).
  8. Spread frosting over cooled bars. Cut and serve.

Notes

For extra flavor, add a splash of maple syrup to the frosting or a dusting of cinnamon sugar on top. Always frost cooled bars to prevent melting.
