Ingredients

  • 1 1/2 cups whole wheat flour
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 1/4 cup unsalted butter, cold

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix together whole wheat flour, all-purpose flour, cinnamon, baking soda, and salt.
  3. In another bowl, combine brown sugar, honey, vanilla, and milk until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until it begins to come together into clumps.
  5. Using your hands, knead the dough until it forms a slightly tacky ball.
  6. Wrap the dough in plastic wrap and refrigerate for 30-45 minutes.
  7. Roll out the dough on a floured surface to about 1/8 inch thick. Cut into squares with a pizza cutter or sharp knife. Poke each square with a fork.
  8. Place crackers on a parchment-lined baking sheet and bake for 12-15 minutes, until edges are golden brown.
  9. Let cool completely before serving.

Notes

Optional: Add molasses, flaxseed, or coconut sugar for flavor variations. These graham crackers are perfect for s’mores or making crusts.
