- 1½ cups old-fashioned oats
- 1 cup almond flour
- ¼ teaspoon salt
- ½ teaspoon baking soda
- ⅓ cup melted coconut oil
- ⅓ cup maple syrup
- 1 teaspoon vanilla extract (optional)
- 2 cups chopped strawberries (fresh or thawed frozen)
- 1 tablespoon lemon juice
- 2 teaspoons maple syrup (optional, for tart berries)
- 2 teaspoons cornstarch or arrowroot powder
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, mix oats, almond flour, salt, and baking soda.
- Add melted coconut oil, maple syrup, and vanilla extract to the dry ingredients and stir until crumbly dough forms.
- Press ¾ of the dough into the bottom of the prepared pan to form the crust. Set the rest aside for topping.
- In a small saucepan, combine chopped strawberries, lemon juice, maple syrup (if using), and cornstarch. Cook over medium heat for 5–7 minutes until thickened. Let cool slightly.
- Spread the strawberry filling evenly over the crust, then sprinkle the remaining oat mixture on top.
- Bake for 25–30 minutes until golden brown and fragrant.
- Allow bars to cool completely in the pan before slicing for clean edges.
Notes
To keep these bars gluten-free, use certified gluten-free oats. Optional add-ins like chia seeds, shredded coconut, flax meal, or chopped nuts can add extra nutrition and texture. Store in the fridge for up to 6 days or freeze for up to 3 months.
