- 2 cups old-fashioned rolled oats
- 1 cup nut butter (peanut, almond, or sunflower)
- 1/2 cup honey or maple syrup
- 1/2 cup mini chocolate chips
- 1/2 cup dried fruit (cranberries, raisins, or apricots)
- 2 tablespoons chia seeds or flaxseeds
- 1/4 cup shredded coconut (optional)
- Pinch of sea salt
Instructions
- In a large bowl, combine oats, seeds, coconut, and salt.
- In a smaller bowl, mix nut butter and sweetener until smooth. Warm slightly if needed.
- Pour wet mixture into dry ingredients and stir until fully combined. Add chocolate chips and dried fruit.
- Chill mixture in the refrigerator for 20–30 minutes to firm up.
- Roll into tablespoon-sized balls and place on a baking sheet or plate.
- Store in an airtight container in the fridge for up to 10 days or freeze for up to 3 months.
Notes
Customize with your favorite mix-ins like pretzels, cinnamon, or white chocolate chips. If mixture is too dry, add more nut butter; if too sticky, add more oats.
