Crispy, protein-packed roasted chickpeas that are easy to make and endlessly customizable with savory, spicy, or sweet seasonings.

Ingredients

  • 2 cups cooked chickpeas (or 1 can, drained and rinsed)
  • 12 tablespoons olive oil
  • 1/21 teaspoon fine sea salt
  • Seasonings of choice (smoked paprika, cumin, garlic powder, chili powder, cinnamon, etc.)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Thoroughly dry chickpeas with a clean kitchen towel and let air dry for 10 minutes.
  3. Toss chickpeas in a large bowl with olive oil, salt, and chosen seasonings.
  4. Spread in a single layer on a baking sheet, leaving space between each chickpea.
  5. Roast for 20–30 minutes, shaking or stirring halfway through, until golden and crispy.
  6. Cool completely before storing in an airtight container.

Notes

For best crunch, always dry chickpeas well before roasting, don’t overcrowd the pan, and store only after completely cooled.
