Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp salt
  • 2 eggs
  • ½ cup vegetable oil
  • ½ cup white sugar
  • ½ cup light brown sugar
  • 1 tsp vanilla extract
  • 2 medium apples, peeled and diced
  • Optional: 1 tsp cinnamon + pinch of sugar for apples
  • For the Caramel Glaze:
  • ¼ cup butter
  • ½ cup light brown sugar
  • 2 tbsp heavy cream
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Peel, core, and dice the apples into small chunks. Toss with 1 tsp cinnamon and a pinch of sugar (optional).
  3. In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  4. In a separate bowl, beat together the eggs, oil, white sugar, brown sugar, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  6. Fold in the diced apples gently.
  7. Pour the batter into the prepared loaf pan and smooth the top. Tap the pan gently on the counter to remove air bubbles.
  8. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Cover with foil if browning too quickly.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. To make the caramel glaze: In a small saucepan, melt butter over medium heat. Stir in brown sugar until fully combined and bubbling.
  11. Add heavy cream and a pinch of salt. Simmer for 3–5 minutes, stirring constantly, until thickened slightly.
  12. Remove from heat and let sit 2–3 minutes. Drizzle over the cooled bread.

Notes

Use Granny Smith or Honeycrisp apples for best results. Let the loaf cool completely before glazing. Store wrapped in foil at room temperature. For variations, try adding walnuts, dried cranberries, or a cream cheese swirl.
